It's the season for baking and sipping chocolate, and time to tout our cacao nibs! Health-focused fans who may be avoiding sugar, we've got your superfood right here in bulk, straight from our chocolate factory in Boulder, Colorado. Nibs are hard, crunchy chunks of cacao that are already fermented, roasted, and winnowed out of the shell, and ready to become chocolate. Before any sweetener or cacao butter is added to make the chocolate, these tasty and unadulterated nubbins are fresh and ready for recipes, whole-food snacking, or your DIY craft chocolate experiments.
What's IN a nib? (GOOD THINGS...)
Powerful and toasty chocolate flavor in a non-melty form, that's a nib for you. In a serving, which is about 1/8 of a cup, cacao nibs have 16% of the RDI of iron (it's the highest vegan source of iron!), plus a whopping load of other essential minerals such as magnesium, copper, phosphorus, and manganese. Magnesium supports mood, mental health, energy, and bone health, and according to Healthline, up to 75% of us may be deficient. Nine grams of fiber and four grams of protein to boot! You get a powerful chocolate flavor without much sugar, with less than a gram of carbs in exchange for all of that clean nutrition. Other good things include a healthy load of antioxidants with anti-inflammatory properies.
We recommend using nibs in granola recipes, energy balls, blending into smoothies, or even sprinkling it on top of banana bread. Some other creative uses are in rice krispie treats, stirred into oatmeal, as a low-sugar substitute for chocolate chips in cookies, or simply as crunchy snacks on their own. Creamy blended sipping chocolate made with Moksha Criollo nibs!
RECIPE: Mexican-style Sipping Chocolate, Paleo and Vegan (serves 4)
Equipment: coffee bean grinder or spice mill and Vitamix-style blender
1/2 cup cacao nibs, ground into powder
3 cups unsweetened almond milk
5 Medjool dates, pitted and soaked for one hour in warm water and coarsely chopped
Vanilla bean, scraped, or 1/2 tsp vanilla extract
1/2 tsp. cinnamon powder
Pinch of sea salt
Optional: coconut sugar to taste
Combine and blend on high in a Vitamix-type blender until smooth, and heat on the stove, stirring occasionally, until just before it boils. Adjust sweetness if desired. Whisk and serve!
Note: Grind the nibs in batches, pulsing so that it does not become a sticky paste that is hard to remove from the grinder.
