Using heavy-char new American oak barrels from a three year "Straight Bourbon Whiskey", Moksha Chocolate dry-infused the highest quality certified heirloom cacao from Shanao, Peru, for three months. The dry aging process allows the cocoa nibs to absorb the aroma and flavor of the barrel and the spirit. Once fully aged, the sumptuous nibs were used to handcraft a dark chocolate bar by adding only a touch of cocoa butter for satin mouthfeel and minimal organic cane sugar to the exquisite barrel-aged nibs.
